SPICED HOT CROSS BUN BAKED BRIE

Ingredients

  • 200g King Island Dairy Cape Wickham Double Brie
  • 4-6 Hot cross buns, sliced
  • 50g butter, melted
  • 100ml water
  • 150gm dried mixed fruit
  • ½ tsp ground cinnamon
  • 1 tsp vanilla extract
  • 3 tbsp marmalade

Directions

Pre-heat oven to 180c. (160c. fan forced). Unwrap brie and place in a small ovenproof dish. Gently score the top of the brie with 5 slits evenly across the top. Place brie in oven for 15 minutes or until cheese is soft and oozing. Set aside to rest. Keep oven at 180c.

Place hot cross bun slices, in a single layer, on a lined baking tray. Brush each with melted butter. Place tray into oven and bake for 4-6 minutes or until slices are golden brown. Flip the slices, brush with the remaining butter and return to bake for a further 3-4 minutes until browned.

Meanwhile, place water and fruit in a small saucepan and bring to a simmer. Add the remaining ingredients and simmer for 4-5 minutes or until fruit is plump and marmalade has melted.

To assemble, gently place warm brie on a serving platter, top with the warm fruit mix and serve with the hot cross bun toasts.
